Coconut Rocks

Makes about 30

  • Beat 3 egg whites until stiff with a pinch of salt
  • gradually add 100 g sugar
  • 50 g flour
  • then 120 g shredded coconut
  • form small balls using two teaspoons
  • bake for approx. 30 min at 120°C

These biscuits keep very well for a few days in a tin box.

Enjoy as a dessert with a chilled glass of Grains Nobles.
