Kiwi Sorbet

For approx. 900ml of kiwi sorbet

  • In a blender, dissolve 150g of sugar in 2 dl of water
  • Add 5 kiwis
  • Add 2 dl of sweet wine, such as a withered Malvoisie
  • Freeze the mixture for approx. 1 hour
  • Whisk 1 egg white firmly with a pinch of salt
  • Gently fold into the cooled mixture until smooth
  • Freeze and stir every 45 minutes until the mixture is completely crystallized
  • You may replace the 2 dl of sweet wine with 1.5 dl of water and 3 tbsp of honey

Enjoy the following day with a glass of Malvoisie.
